Pasta: Orzo is used in this recipe. Other types of pasta won’t work in this recipe since orzo has a very specific cook time and texture compared to other pastas.

Dairy: Heavy cream and parmesan cheese are used to create the rich and creamy sauce in this recipe.

Vegetables: Fresh basil and sundried tomatoes are added in at the end to add some freshness and zest to the recipe.

How to Make Chicken Orzo Skillet

  1. Sear chicken in the pan and cook util golden brown and cooked through. Remove from the pan.
  2. Sautee the onions, garlic, and orzo until tender. Add in the water and turn down to a simmer.
  3. Once orzo is tender add chicken, vegetables, and remaining ingredients and stir until warm and sauce has thickened.

  • The fresh basil can be replaced with fresh spinach or arugula.
  • Make sure to continuously stir the orzo while its simmering to ensure it does not stick to the pan.

Ingredients

  • 2 tablespoons olive oil
  • ½ teaspoon thyme
  • 2 chicken breasts diced
  • ½ onion diced
  • 2 cloves garlic minced
  • 1 cup dried orzo
  • 1 cup heavy cream
  • ¼ cup sundried tomatoes
  • ¼ cup fresh basil or spinach
  • salt and pepper to taste
  • ¼ cup parmesan cheese grated, optional

Instructions

  • In a large skillet heat oil over medium heat. Season chicken with salt, pepper, and thyme.
  • Sear the chicken in the pan on all sides until golden brown about 3-4 minutes. Remove from the pan and set aside for later.
  • Add the onion, garlic, and orzo to the pan and cook until tender, about 2-3 minutes.
  • Pour 2 cups of water into the pan and bring to a boil. Turn down the heat to a simmer and let cook for 15 minutes, orzo should be tender.
  • Add chicken, sundried tomatoes, basil/spinach, and cream into the pan and cook until all ingredients are heated through.
  • Stir in parmesan cheese if using and serve.
